Vegan Recipes - A Few of My Alltime Faves

Looking for vegan recipes? I spent 5 years as a strict vegan. I LOVED cooking vegan foods, and I particularly enjoyed the challenge of making the diet work for me by modifying meals I ate with others into vegan recipes. I occasionally found traveling as a vegan a bit..well..limiting, but I have several stories of being on the road and having my fellow travelers getting quite ill from eating some animal product or other, and I managed to avoid the tummy troubles.

I still have fond memories of some of the funny reactions I received because of my strange eating habits - in particular a pizza chef in France not comprehending how it would be possible to make a cheeseless pizza. "Just do everything you usually do" (said me), "but leave off the cheese."

I really enjoyed the vegan lifestyle, and I never once felt like I was missing out. I also noticed a significant drop in my cholesterol in only my first few months as a vegan. In the end, the diet didn't ideally suit my body ( read my story here ), but I still enjoy some of my favorite vegan recipes now, and I try to take with me the cooking and health lessons I learned on my journey. I'm excited to share these vegan recipes, as they always make me smile.

Tempeh Reuben

A reuben is a sandwich that originated in New York City, involving corned beef or pastrami, thousand island dressing, melted cheese, sauerkraut and usually toasted rye bread. Not the healthiest, or most digestible option for lunch! This vegan version lightens it up, and I SWEAR it's better than the original..

Marinate sliced tempeh in tamari soy sauce and a bit of olive oil for 5-15 minutes. Saute on medium heat until nicely browned.
Make a sandwich on toasted rye or sourdough bread, by adding tempeh, sauerkraut, and a drizzle of Annie's Goddess or your favorite tahini dressing.
Serve with a few potato or corn chips & a nice salad and ENJOY!!




Tofu Scramble

This was a regular breakfast for me when I was a vegan. It was a great way to start the day by getting a nice healthy protein kick, with a load of veggies. It would keep me going for hours!

Begin by lightly sauteing (in very little oil) whatever veggies you have at home.* Onions, broccoli, & red pepper work well, but I've been known to use just about anything! Add firm tofu (one standard container should serve 2 people), and saute until lightly browned. Add generous splash of tamari soy sauce, a big pinch each of turmeric, dried oregano, & paprika, and about a tablespoon of veggie bouillon powder (use yeast-free if you don't eat yeast.) Stir it all up and add a quarter cup of hot water. Cook until the water is absorbed and the whole thing looks like crumbly scrambled eggs. Season with salt & pepper, garnish with any fresh herbs you may have (optional) & serve with toast.
Mmmm hmmmmmm....

*If you're using leafy greens, add them after the tofu.
