I never follow a recipe when making soup, but I recognize that many of you (ahem, most people) do like to have a guideline, especially when trying something new!  So I've provided one at the link below..which happens to be a wild foods website that I really like.  this recipe makes a blended soup, but you can, of course, leave it unblended if you prefer a more chunky version.

Enjoy, and don't forget to wear gloves (or pick extremely carefully), and respect the nettles - they certainly demand it :)</description>

But I had a roommate in college who spent all of our years together rebelling against her &quot;healthnut mom&quot;, and literally eating crap just to assert her independence (or maybe revenge?).     <description>After about a week of non-stop rain, the sun is shining bright this morning.  I'm still not used to the seasons here in Scotland - we tend to get 4 seasons every day for much of the year!

But today the sky is blue, and I noticed a plum tree in full ripeness when I raced by in a downpour last week, so now I'm pulling out my running shoes, and gonna go trot off to seek it out.  There's nothing like ripe plums off a tree - they're a wildly different animal to those ones you get in the store, have to wait 2 weeks to eat without puckering..these are like little candies!  Wild plums - one of my favorite things about British summers!</description>

    <description>All these years, I never really thought of making my own pasta - why bother when such a varied assortment is easily accessible?  

But we've been trying to spend less money on food the last couple of weeks, so I've been experimenting with using flours at home.  Today, on a whim, I made my own &lt;b&gt;kamut&lt;/b&gt; pasta (kamut is an ancient grain, related to wheat, but different), and not only was it easy and yummy, but also fun!!

I mixed &lt;b&gt;2 cups kamut flour, 1 tsp salt, 1 egg and 1/2 cup water&lt;/b&gt; and kneaded for 5 minutes to make a dough (you may want to use more water if your dough's too dry, also the egg is optional - just replace with more water if you don't want it). I let the dough rest for 30 minutes, then I played (play-dough)!  

I rolled some out thin and cut into strips for fettucine, and I made a long sausage shape with some and cut little bits off and squished them to make &lt;i&gt;orecchiette&lt;/i&gt; (&quot;little ears&quot;).  

For lunch, we boiled some of the orecchiette and sauteed it in a bit of &lt;b&gt;olive oil&lt;/b&gt; with with &lt;b&gt;garlic and fresh greens&lt;/b&gt; from the garden.  Absolutely delish!!

    <description>Spring is here in the northern hemisphere!  Did you know that early spring greens are some of the most supercharged foods in nature?  They are packed full of &lt;b&gt;vitamins&lt;/b&gt;, act as a &lt;b&gt;liver and system tonic&lt;/b&gt;, and some help &lt;b&gt;purify your blood&lt;/b&gt;, too.  This can be particularly helpful after a winter of heavy foods, and (perhaps) a little indulgence?!?  There's a reason nature sends up green shoots this time of year...
But if you don't have time, inclination or wild space to go collecting things like &lt;b&gt;dandelion greens and nettles&lt;/b&gt;, never fear, you can still get many healing effects with homegrown or store-bought greens.  Go for what's most &lt;b&gt;local and seasonal&lt;/b&gt; for best effect, and eat the raw or lightly steamed or sauteed.  Add them to soups, salads, sandwiches..make green pesto to put on your pasta - be creative!

There's a reason &quot;Eat Your Greens&quot; is #1 on my list of &lt;b&gt;Healthy Eating Guidelines&lt;/b&gt; - start eating them regularly, and I guarantee you'll notice a difference in your energy levels, and overall well-being.

    <description>Happy New Year!  It's been a busy few weeks, what with holidays, travel, snow, family &amp; friends, etc, etc.  The light is officially returning here in northern Scotland, though it will probably be another few weeks before it's light in the morning when we leave the house.  In the meantime, I've resigned myself to the fact that this is the perfect time of year to have &lt;b&gt;soup for breakfast&lt;/b&gt;!  Yes, I know it sounds strange, and I've gotten many a comment over the years from my husband!  But think about it, what better way is there to start a cold day?  Soup is warming, filling, energizing, hydrating...you can load it with whatever you feel you need on any particular day.  If you feel depleted, you can throw a bunch of greens in.  If you feel ungrounded, add root veggies.  If you feel you need energy, try adding some lean protein.  The world of creative soups is yours for the taking!     <description>I spent a good chunk of time this morning working with a devoted team (yay for helpers!)to process and save some of the masses of extra kale that's been harvested from this season's crop.  We first washed and de-stemmed it (saved the stems for soup stock), then chopped it and I blanched it in a huge pot of boiling water for not even a minute.  Then plunged it into a cold water bath to stop the cooking...
We then squeezed the excess water out, and stuffed it into a big plastic tub for freezing.  We started with 3 large (about 1 meter by .5 meter or 3 feet by 1.5 ft) burlap sacks full of fresh kale.  We ended with half a gallon tub full of end product!  It's incredible how much it shrinks!! It was such a deep lovely green color - we're going to be so grateful for it in midwinter.
 
We've got about 10 more bags of kale to get through and at least that many of leafy cabbage, though a good lot of it will go to fermenting, and kale chips, too.  Ah, the joys of a northern climate!!</description>
