Yes, cheap food CAN be good food! Eating healthy on a budget is easier (and tastier) than you may realize. In fact, less expensive foods are some of the healthiest around... Some of the countries in the world with the least expendable income, have the healthiest diets. Southeast Asia springs to mind...
The trick is to avoid processed, packaged foods, as much as possible, and look for simple ingredients in large quantities (ie buy in bulk). Also shop for fruits and veg in season. It makes a big difference in price, freshness, and nutrition. You can, of course, grow your own vegetables to supplement what you buy. But be careful, gardening is addictive! One of the simplest ways of eating healthy on a budget is to eat a grain and pulse/legume together, and add whatever veggies you have in the fridge. Top it off with your favorite herbs or spices, and it really is that easy. Here are 3 examples of very cheap, but good-for-you options. In all cases, cook the grains separately, then stir in at the end: 1) Rice and beans, add some sauteed onions, a chopped tomato, a pinch of ground cumin, a bit of salt, and any fresh herbs you may have (optional). 2) Millet and lentils, stir in a couple large handfuls of leafy greens (such as kale or rocket), and season with Indian spices, such as turmeric & mustard seed, (or you can play it really easy with some curry powder instead), and some sea salt to taste. 3) Quinoa and chick peas, saute with smoked paprika & garlic, add a handful of finely chopped mushrooms, some roughly chopped spinach, and salt & pepper to taste.
